Today, I made Rocky Road and instantly knew I had to share the recipe with you. Its a quick and simple treat which only needs a few ingredients.
Recipe:
75g Butter
175g Chocolate ( I used dark chocolate, but if I make this again. I would use milk chocolate instead, as me and my family all thought the dark chocolate was too strong. But use which ever chocolate is your favourite.)
2 tbsp Golden Syrup
125g Cookies (I used the Maryland Chocolate Chip Cookies but again use which ever ones you prefer)
75g Marshmallows
Icing Sugar for dusting
I halved my recipe, so if you want a bigger batch then just double the ingredients.
Method:
Firstly, you want to line and grease a baking tray. Then combined the butter,chocolate and golden syrup in a pan and simmer on a low heat (you don't want to burn your chocolate). Stir the mixture until your chocolate is melted thoroughly, take off the heat and let it cool down, whilst your chocolate is cooling, place your cookies into a seal able bag and bash carefully with a rolling pin, ensuring you have both big chunks and crumbs of cookie.
Once you think your chocolate is cool enough, combined your cookies and marshmallows. If you put the marshmallows in while the chocolate is still hot the marshmallows will also melt, which you don't want to happen. When all the cookies and marshmallows are coated in chocolate, place it into a baking tray and level it out with either a spatula or the back of a spoon. Finally, place it into the fridge , if you're like me and can't wait to dig in then leave it for a minimum of 2 hours, however if you want your rocky road to be harder then leave it in for longer. Once your rocky road is set dust it with some icing sugar, then cut into strips( this may be quite hard, especially if you've left it in the fridge for longer than 2 hours).
